Your cutting board isn't dirty.
It's damaged.

Every knife stroke carves a groove. Grooves hold water, juice and bacteria β€” and no amount of scrubbing reaches the bottom of one. That's why wood grows mould and plastic goes grey. Katori is a single sheet of solid titanium.

  • 99.89% pure titanium, verified by SGS lab testing
  • Non-porous surface β€” nothing soaks in, nothing stays behind
  • Knife-friendly: won't wreck your edge like glass or stone
  • Rinses clean in seconds β€” dishwasher safe

The part nobody mentions

It's the one tool you damage every time you use it.

Think about what a cutting board actually is. You take your sharpest knife and you drag it across the same surface, hundreds of times a week, on purpose.

Every one of those strokes leaves a groove. Raw chicken juice runs into the groove. Water follows it. The dishcloth doesn't. A week later the board smells, a month later it's stained, and at some point you throw it out and buy another one β€” and you call that normal.

You can't scrub out a cut. You can only replace what's been cut.

That's why wood and plastic boards are sold the way they are: cheap, and often. They're consumables dressed up as tools. Titanium is hard enough that a kitchen knife doesn't carve into it β€” so there's no groove for anything to hide in, and nothing to replace next year.

Titanium board compared with a mouldy wooden board and a scratched plastic board
What you're replacing

Three ways a board goes bad

None of these are cleaning failures. They're what happens to a soft surface that gets cut, soaked and heated over and over.

Wooden cutting board with mould in the grain

Wood: mould in the grain

Cuts open the grain, the grain holds moisture, and in a humid kitchen that's all mould needs. It grows below the surface, which is exactly where a sponge can't go.

Plastic cutting boards stained and scratched

Plastic: stains and shedding

Every stroke shaves a little plastic off the surface. The scratches hold colour and smell for good β€” and the shavings have to go somewhere.

Dull, worn knife edge

Glass and stone: a ruined edge

Surfaces that refuse to be cut take it out on your knife instead. Beating the mould problem isn't much of a win if it costs you the blade.

Two Katori titanium boards on a kitchen counter

One board.
Rinse it, dry it, done.
Nothing to replace next year.

What you get

Four things a titanium surface does differently

Knife-friendly surface

Designed to take a blade without destroying its edge β€” unlike glass, marble or ceramic boards that stay pristine at your knife's expense.

Non-porous and odour-resistant

Nothing soaks in. Garlic, fish and raw meat rinse off the surface instead of settling into it, so yesterday's dinner doesn't turn up in today's.

It doesn't crack or warp

Solid titanium. It won't split along a grain, swell in the sink or buckle in the dishwasher β€” the three ways boards usually die.

Cleans in seconds

Water and a wipe for most jobs, dishwasher when you'd rather not. No oiling, no seasoning, no drying rack ritual.

Kaito Mason, founder of Katori
Why it exists

Built by someone who cuts on a board all day

Katori was created by chef Kaito Mason around a simple professional habit: in a working kitchen, a surface that can't be fully cleaned doesn't stay in service. Home kitchens inherited the opposite standard β€” boards that are replaced instead of cleaned.

"Finally something that doesn't cause me anxiety about potential cross contamination when I'm prepping chicken. Katori really doesn't scratch at all so no germs and bacteria get into it and then to other foods."

"Slicing everything on this board is such a delight. The knives do remain as sharp as a tack! I've been using it for months and had no problems with dulness!"

Questions

Everything worth asking

Won't a metal board ruin my knives?
Katori is built as a knife-friendly surface β€” that's the difference between it and glass, marble or ceramic boards, which stay unmarked precisely because they're harder than your blade. As with any board, keep your knives sharp and let the edge do the work instead of forcing it.
How do I clean it?
Rinse with water for most jobs, soap and a sponge for anything greasy, or put it in the dishwasher. No oiling, no seasoning, no special drying routine.
Does it scratch?
You'll see fine surface marks over time, the same as any well-used pan. What titanium doesn't do is develop the deep cuts that hold moisture and food β€” which is the part that actually matters.
What size is it?
The board measures 11.4 Γ— 7.9 inches (29 Γ— 20 cm) β€” a compact size that fits most kitchens and is easy to handle, rinse and store.
Can I put a hot pan straight on it?
Yes. Katori is heat resistant, so you can set hot pans or skillets directly on the board without worrying about warping or damage.
Can I use it for raw meat and fish?
Yes β€” it's rated for all food types. Because the surface is non-porous, juices stay on top and rinse away instead of soaking in. Many people keep one board for raw and one for everything else.
What does shipping cost and how long does it take?
Shipping and handling starts at $4.95 and is calculated at checkout based on your destination. Orders are usually processed within 24 hours, and US delivery is estimated at 7–10 business days. You get a tracking number by email once it ships.
Do you ship outside the US?
Yes, worldwide. Delivery estimates vary by region β€” 7–10 business days for the UK, Europe and Canada, 9–12 for Australia and New Zealand, longer for some regions. Customs duties, where they apply, are set by your country and aren't included.
How do returns work?
You have 30 days from delivery. Contact support with your order number first β€” they issue an RMA and the return address. Changed-mind returns need the board unused and in its original packaging. Return shipping is yours; the original shipping fee isn't refunded. Refunds are issued after inspection and take 3–5 business days to appear.
How do I pay?
PayPal, or credit and debit card through an SSL-encrypted checkout.
